A 5-Year Old Sous Chef in Training at Skappo Italian Wine Bar and Restaurant

Skappo is the Italian wine bar and restaurant that my husband Michael and his family opened 8 years ago.

Massimo has been going into Skappo’s kitchen even before he could walk.

photoAt age 5 he has now become a “Sous Chef in training” under the tutelage of his Zio Marco (Uncle Marc) Sincavage for savory items and Zia Yvette (Aunt Yvette) for baking.

This week the New Haven Independent, an online newspaper, features Skappo Italian Wine Bar as part of their “Chef of the Day” series.

Zio Marco, with the help of Massimo, make Skappo’s signature rabbit dish.  The recipe is from Nonna Anna’s home town of Assisi, Italy.

I am so proud that Massimo has taken an interest in the family business.  Who knows?  This could be the start of a promising career for him.  You can say I am a very proud Mom!
